Great Grandma Waide's Rhubarb Crunch Squares

As we drove by the local farmer's house yesterday Will asked, "What he got today?"
"He has squash, cucumbers, and rhubarb."
"Oh, oh, okay. Let's buy some rhubarb!"
"Well, I am really waiting for him to have blackberries and tomatoes."
"No, we need to buy some rhubarb. I like rhubarb!"
"Now that you mention it strawberry-rhubarb crunch does sound pretty yummy."

So we stopped and bought two bags of rhubarb and a couple of super sized zucchini. Upon arriving home we dug through Great Grandma Waide's Recipe Box until we found the worn and stained "Rhubarb Crunch Squares" recipe card circa 1965.

Grandma gathered the ingredients, and the boys helped me chop the rhubarb. While the rhubarb simmered, we prepared the oat base and topping mix. Will could not resist tasting the topping. We also sampled a bit of the rhubarb before putting it in the baking dish, and Quinn LOVED it! "More! MORE! Bite! BITE!"

Once out of the oven, we perfectly paired it with vanilla ice cream. YUMMY! Nice call on the rhubarb, Will!
